Koke Shalaye is our brand new single origin offering from the Yirgacheffe region of Ethiopia. The Koke Shalaye cherry processing facility is situated some 2000 masl and processes coffees from 1890 local smallholder farms. The combination of high altitudes, fertile soil and plentiful rainfall really contribute to the high quality of coffee the region is known for. The local indigenous "heirloom" varietals, which grow wild in Ethiopia, are responsible for the unique flavour notes that coffees from this region are known for.
This coffee is one we are really excited about. It is a washed coffee, which means that the cherries, once picked, are pulped, fermented, washed and then left to dry under the hot African sun. This process typically produces a clean flavour profile in the cup and this coffee does not disappoint. Expect a bright and clean cup with flavour notes of tangerine, berries and apple with plenty of flavour sepperation and clarity.
