Coffee
Here at Applecross Roastery, we firmly believe that the coffee should be the star of the show. We only use the finest speciality grade green coffee which is ethically sourced from our suppliers. Once our chosen few coffees arrive at the roastery we can then set about roasting some test batches and finally on to the production roast before we send the coffee out. All of our coffees are roasted to a unique set of parameters based on the individual bean and origin. All of these measures along with our love and passion for coffee, we hope, will translate into a unique experience in the cup.
Applecross
Life on the Applecross peninsula is a truly unique experience and this is something we feel really shapes our coffee. Coffee, for us, is a few moments out of a busy day where we can escape and be transported to a different place while we brew and savour a lovely coffee. This is why it is so important to us that we roast our coffee to this highest standards.
The Gaelic word for Applecross is "AChomraich" which translates to "The Sanctuary". This name reflects a time when Saint Maelrubha founded a monastery here in the year 673. The notion of Applecross being a sanctuary is still very prevalent today as it feels like a million miles away from the hustle and bustle of everyday life and in many ways the perfect place to set up a coffee roastery. It is hard to put into words but Applecross feels like a very special place. Maybe that comes from it's inaccessibility and remoteness or maybe from its rugged beauty and rich history. Either way, we hope our coffee carries a little piece of Applecross with it whereever it ends up.
Impact
As a community, the people of the Applecross peninsula are very mindful of their impact on the local and wider environment. Here at Applecross Roastery we really wanted to echo these sentiments right from the outset and are constantly looking at ways in which we as a business can reduce our impact on the environment.
Sustainability is also very important to us and to the speciality coffee movement as a whole. It is important to us that the farmers producing the amazing green coffee that arrives at the roastery are paid properly. Whilst there is still a way to go, the continuing shift in popularity from commercial coffee to speciality coffee is something that is positively affecting the situation and that is something we are really proud to be part of.
